Assorted vegetables pie
The most classic and traditional of vegetarian savory pies. With no secrets anymore. It is perfect for many occasions because it accompanies many other dishes without overpowering their taste.
Batavian endive pie (traditional)
A traditional recipe from Campania region. Endive is very versatile because it can be combined with many ingredients so it is perfect for many fillings! Generally Neapolitans serve it during the Christmas holidays but it is always good.
Easter pie, Genoa-style
Typical recipe for Easter in the Genoa area. Its ingredients are those that are usually brought to the table in spring and for Easter. First of all, eggs.
Easter cheese cake, Umbria-style
In Umbria and central Italy, the cheese cake is served at Easter. It opens the menu because it is served with hard-boiled eggs and slices of homemade salami cut by hand. So the slices are not thin as is the tradition in northern Italy. Not bad, right?
Farinata (savory cake with chickpea flour)

Vegetable mould, Marches-style
It is a recipe from the Marche region to be made in summer at the height of the ripening of fleshy sweet peppers, yellow and red. The peppers must be combined with potatoes and tomatoes. When we proposed serving mixed cold cuts in a bread bowl, many years ago, we were highly appreciated by our readers. Today we also see salads served in bread bowls in many fast food chains. But if you prepare the bread bowl yourself... the taste gains. It is always a beautiful and colorful centerpiece to eat.

Cardoon pie - Our recipe
We produce cardoons in our organic garden and they certainly do not grow as big as the ones you find at the market but they are very tasty. A couple of times during the winter we prepare this recipe that our friends expressly ask us for. The recipe resembles eggplant parmesan but I do not fry the cardoons, I bake them and so the recipe becomes much lighter.
Chestnuts and savoy cabbage savory pie
A vegetarian recipe very suitable for autumn. The sweetness of chestnuts is contrasted by the slightly bitter taste of savoy cabbage. A very interesting combination.
Courgette, tuna and ricotta pie
The name already tells you what the ingredients are. The shell is made of puff pastry. Can be done quickly and easily. I often combine it with other dishes in buffets.
Fennel-and-tuna savory pie
I discovered by chance how good the combination of these two ingredients is. Hence the idea was born. I used pizza dough for the shell but it can also be made with shortcrust pastry.
Green tomato quiche
If you also have a small garden, do not miss this recipe of mine. Besides the fact that green tomatoes can now also be found at greengrocers ;))) ... In any case, at our house nothing is ever thrown away, not even the last harvest of tomatoes that were not able to ripen on the plant and that are not allowed to ripen off the plant otherwise they taste like nothing.

For those looking for refined vegetarian appetizers, I propose this savory pie which is typical for winter and autumn. Just think how good Tuscan kale is paired with chestnuts. I will add nothing else. The recipe is mine and I am proud of it.
Savory tart with salt cod
Do you like salt cod? then you will also like this savory pie with a casing made of pizza dough. The filling is very tasty because I cooked the salt cod in tomato and orange juice. The combination of orange juice and tomato is typical of Sicilian cuisine and my husband and I find it very, very good.
