I planned it one day when, after picking up some cardoons in my organic garden, I was looking for a different way to cook them. I thought they might be delicious with the same technique of eggplant parmigiana (you can find the link to recipe below). In fact, I was not wrong. My recipe, however, doesn't provide for frying and is therefore digestible.
