Traditional baked potatoes with two unusual ingredients-wine and paprika.

Ingredients

  • 1,5 kg (3 1/2 lb) medium-sized potatoes
  • 16 tablespoons olive oil
  • 2 tablespoons dried rosemary
  • 100 ml (4fl oz - 1/2 cup) dried white wine
  • Salt
  • Paprika (optional)

Preheat oven to 180°C (350°F). Cut potatoes lengthways into quarters and place in a bowl of cold water. Rinse under cold running water and pat completely dry with absorbent kitchen paper.
Arrange them in a shallow baking dish; add the olive oil, rosemary, salt and wine. Bake in oven for about 40 minutes, or until golden brown and tender, stirring.
Sprinkle with paprika or pepper or chilli.
